The Hostess City is welcoming a flood of oyster farmers, oyster distributors, oyster-loving chefs, oyster researchers and other oyster-farming industry folks when the 2023 Oyster South Symposium begins in Savannah on March 9.
Oyster South is a 501 (c)(3) charitable organization that connects communities and provides resources to foster the success of oyster farming in the southern United States by spotlighting and expanding the environmental and economic benefits of oyster farming. Its annual Symposium (which travels to different destinations around the Southeast) is bringing Oyster South members and others together in Savannah to discuss pressing industry issues and share relevant, practical research on oyster aquaculture.
Over the three-day event, attendees will learn more about Southern oysters and how to best grow, deliver and serve them.
Most of the symposium will take place at the lovely Ships of the Sea Museum in Savannah’s historic district. Programs on the agenda will discuss research into what could be causing kill-offs of farmed oysters in summer months; offer information on insurance options for oyster farmers; and highlight the work of Athens-Georgia-based Shell to Shore, an oyster shell recycling program.
There’s plenty fun on the menu too, including tours to the University of Georgia’s shellfish hatchery, a Director’s Reception at Service Brewing Company, “Shuck and Tell” and happy hour events for slurping and sipping, plus a trade show that lets suppliers and vendors show off the latest and greatest in oyster farming tools and gear.
